Light and green: three delicious soups for spring

Bonn (dpa / tmn) - Soups are not just something for the cold season. With seasonal vegetables and fresh herbs, they also go very well in the spring kitchen. That can be an Italian minestrone or a spicy wild garlic cream soup, reports the Federal Center for Nutrition.

The best base for a soup is a homemade vegetable broth that can be prepared in advance. To do this, you peel or clean soup vegetables such as carrots, celery and leeks and cut them into large pieces. Sauté all ingredients in a saucepan with a chopped onion and a little oil, fill up with water and let simmer. It is seasoned, for example, with thyme, rosemary, bay leaves, pepper and allspice grains. Then pour through a fine sieve and season with salt.

The vegetable broth is the basis for a spring minestrone with green asparagus, spring onions, kohlrabi and carrots. Fry the carrot slices and kohlrabi sticks with garlic in a little butter and fill up with vegetable stock. Let simmer for about 20 minutes. After ten minutes, add the asparagus and finally the spring onions. The minestrone is seasoned with salt and pepper and garnished with basil leaves. Fresh baguette tastes good with it.

For an Asian-themed spinach soup, onion and ginger are sautéed with fresh leaf spinach. Pour in the broth and coconut milk and refine with lime juice and coriander.

Cream of wild garlic soup also tastes like spring: for this you fry potato cubes with a chopped onion, douse them with vegetable stock and let them simmer. Chop the wild garlic and add at the end of the cooking time. Puree the soup and refine with a little pepper and crème fraîche.
